Origins Organic Coffee is the organic line of Hines Public Market Coffee Canada.
We bring the same dedication to quality in selection and roasting as typifies the Hines tradition, but our Organic distinction means we sell a minimum 95% Certified Organic coffee beans. The Hines Signature Label represents coffees selected with quality and sustainable growing practices as the sole determining criteria. Certifications are good. But so is coffee that makes you want to sing, dance, break something.
Farmer Friendly.
Let’s set a few things out in the open for consideration. We believe each individual in the coffee industry has the responsibility to determine what they can do from their position, within their means, to the maximum extent of their dedication and credibility. A growing number of larger companies make considerable contributions to the lifestyles and wellbeing of coffee producers and workers at origin. With our particular skills and experience, and our relatively small size and methods (see below), we consider ourselves most effective by volunteering directly at origin (the coffee producing regions). Between our 4 partners we currently dedicate a minimum of 100 unpaid days each year at origin. This ranges from installing and repairing roasters to lending our experience to the training of roastmasters, baristas, competition judges, certifying q-graders, working with labs and professionals, sharing and learning from one another. This is more rewarding and meaningful for us personally, and more quantifiably significant than if we were to reduce our contribution to dollars passed in transaction. Again this is because of the relatively insignificant amount of coffee we purchase each year. It is also because we need more than transactions and numbers to keep us motivated and to rejuvenate our spirit. Our relationships keep us working. To be clear, this is how we feel we are most effective, this is how we contribute. *And just to make sure we got things covered here: we’re not just buying some cheap coffees and spinning some unicef yarn – we’re dedicated to buying quality coffees, farmed sustainably; bought and traded transparently. And we’re happy to provide that information and discuss each coffees path to you.
Artisan Roasted.
Every single bean that comes in an Origins Organic Coffee or Hines Public Market Coffee bag will always be, without exception, roasted “by hand” – no pre-set temps, computers, or timers - and weighed, bagged and sealed by hand. Slow and steady. We would go bonkers if we weren’t always sniffing, listening for pops, and using our highly trained eyeballs.
